Meet Our Chef

Born and raised in Louisiana’s Honey Island Swamp, Chef Tommy Finch grew up catching wild game, fishing local waters, and harvesting vegetables from his mother’s garden. With a fearless approach to bold flavors and a deep respect for seasonal ingredients, his culinary roots run deep. While studying at LSU, Tommy began cooking to support himself, and a gold medal win in the ACF Culinary Competition’s poultry division confirmed his calling. From that moment on, he committed himself to the craft of cooking with passion and purpose.


Tommy spent a decade with New Orleans’ iconic Brennan family, honing his skills at the James Beard Award-winning Commander’s Palace and its sister restaurant in Destin, Florida. He later consulted on several acclaimed restaurant openings in the New Orleans area before becoming Executive Chef of a Michelin-recommended Brooklyn restaurant, where he led a nationally celebrated seafood program. It was at Commander’s Palace where he met his wife, Kaitlyn—a Brooklyn native with a résumé that includes Jean-Georges and Fausto. Together, they believe a restaurant should feel like the most memorable dinner party at a dear friend’s home.


Passionate travelers, Tommy and Kaitlyn draw inspiration from global culinary traditions, with memorable experiences in Spain, Africa, Colombia, Turkey, Southeast Asia, and their favorite, Mexico—where they got engaged. Chef Tommy’s cuisine blends these global influences with the soulful flavors of his Louisiana heritage. Now in the Catskills, they are thrilled to bring their hospitality and love for food to a new community, rooted in the region’s rich local bounty.
